It all began with a mesmerizing trip to Europe, where my sister and I, after a long day of exploring Barcelona, stumbled upon a quaint bar named La Dorotea. Here, we indulged in a delightful spread of olives, perfectly paired with exquisite wines—a true feast for the senses!

A few days later, while meandering through a French farmers' market in Nice, we discovered aromatic herbs de Provence. This serendipitous find was the final touch needed for what would become a staple in our kitchen: Leslie’s Marinated Olives. This easy, yet impressive recipe is not only a hit at gatherings but also a lovely homage to our European escapades.

Leslie's Marinated Olives: An Easy Appetizer That Will Impress

Ingredients:

  • 2 cups whole unpitted olives (a variety of types preferred)
  • 3 Tbsp olive oil
  • 4-6 cloves of fresh garlic
  • 1 Tbsp herbs de Provence
  • Ground black pepper, to taste

Directions:

  1. In a bowl with a lid, combine all the olives.
  2. Crush the garlic cloves on top and add them to the bowl.
  3. Stir in the olive oil, herbs de Provence, and black pepper until everything is well blended.
  4. Cover and refrigerate for at least 4 hours to allow the flavors to meld beautifully.
  5. Give the olives a good shake or stir before serving for the best experience.
